Mini Apple Pies

I wasn’t sure how these Mini Apple Pies would turn out, to be completely honest. Some things just aren’t meant to be recreated into healthier versions, but this one luckily was! Plus they were super fun to make! 🙂 These are a great treat to share with your friends and family, and they’re the perfect healthy substitute for traditional apple pie.


Ingredients:

  • 1 tube reduced fat crescent rolls
  • 1 Granny Smith Apple, chopped
  • 1 tsp Vanilla extract
  • 1 TBSP Snickerdoodle protein powder
  • Spices: Cinnamon, Apple Pie Spice, to taste
  • Stevia or sugar substitute (powder, not liquid), to taste

Directions:

  1. Preheat oven to 350 degrees
  2. On a lightly floured cutting board, flatten the crescent roll dough and roll with a pin until dough is about 1/4 inch thick
  3. Using a cup, use the top to cut dough into circles. *Make sure to leave some remaining dough for the top*
  4. In a small bowl, combine all spices, stevia or sugar substitute, protein powder and vanilla.
  5. In a non greased muffin tin, press each circle into the pan, making sure to press dough all the way up into the sides.
  6. Sprinkle spice mixture on the bottom of each pie, add chopped apples and repeat until the pies are full.
  7. Cut strips of remaining dough and decorate the tops if you’d like, or you can leave them plain.
  8. Bake for 5-10 minutes. *This may not seem long, but remember – we are using crescent roll dough which typically doesn’t take long to cook :)*

*Cooking tip: stevia doesn’t melt the way sugar does, so this won’t be as much of an ooey-gooey pie you may be used to. Feel free to use either depending on your preference!
